Growing up my parents were on the “Benesh Diet.” It was mainly raw and vegan with lots of fresh vegetable and fruit juice. One of the recipes that came out of this diet was carrot-apple juice. Although I ate healthy as child my diet was more varied than way my parent’s followed, but I did love me some carrot-apple juice. We would start our mornings with it, and if you ever had so much as a sniffle, it was the first thing my mom would serve.
Carrot-apple juice came to hold a special place in my heart. It is pure comfort to me. We drank it so often back in the day that slightly orange palms were common. Now I reserve it for special occasions.
Carrots and apples are both high in natural sugars, so while the juice is completely natural, it can spike your blood sugar. As a daily practice, I would add in some cucumber, spinach, celery…more lower-sugar green stuff.
That said, if you’re in the mood for pure, sweet comfort, here’s our recipe for the best carrot-apple juice around.
Ingredients
- 6 carrots, washed, unpeeled
- 2 medium golden delicious apples, washed & chopped to fit into your juicer (you can use whatever apples you have on hand)
Instructions
Juice all ingredients & strain the resulting juice with a fine mesh strainer. I’m a fan of ultra smooth juice.
Over the years we did try a few variations. Our favorite was to take the resulting juice (no need to strain) and put it into your blender with a handful of sunflower seeds (approx. ¼ to 1/3 cup) and blend until the seeds are pulverized and small enough to suck up through a straw.
Whichever way you spin it, carrot-apple juice is awesome, just awesome.
